Dijon mustard and apricot preserves, combined with onion and chicken broth. Mixture is slow cooked with boneless pork loin roast until pork is tender, approximately 8 hours.

1 can (10 1/2 ounces) Condensed Chicken Broth
1 jar (18 oz.) Apricot Preserves
1 large Onion, chopped
2 tablespoons Dijon-Style Mustard
4 pounds Boneless Pork Loin Roast
Preparation:
1. Combine condensed chicken broth, apricot preserves, chopped onion, and Dijon mustard in medium bowl.
2. Transfer broth mixture to crockpot.
3. Add pork to crockpot.
4. Cover and cook on LOW 8 hours.

Over Cooking Pork
Pork can quickly over cook, especially with dry heat methods of cooking. When pork is overcooked, moisture is driven from the pork, and the meat can be tough and dry.

Allow The Roast To Rest
After cooking pork, and most meat for that matter, allow the pork to rest before carving. The juices in the meat will redistribute throughout the cut of meat, and stay in the meat when sliced.
