Cajun Garlic Pork Roast

Slow roasted pork loin covered with spice rub featuring red pepper flakes and chili powder.
Ingredients -
1 (3-pound) Boneless Pork Loin Roast
1 teaspoon Seasoned Salt
1 tablespoon Oregano Leaves
1 tablespoon Fresh Ground Black Pepper
1 Garlic Clove, crushed
1/2 teaspoon Red Pepper Flakes
1 teaspoon Chili Powder
1 teaspoon Ground Cumin
 
Preparation:

1. Preheat oven to 350 F.

2. In small bowl, blend seasoned salt, oregano leaves, pepper, crushed garlic, red pepper flakes, chili powder and ground cumin.

3. Press spice rub into all surfaces of pork roast.

4. Place pork loin into shallow baking dish or roasting pan.

5. Bake pork 90 minutes, or until meat thermometer reads 155 F.

6. Remove pork roast from oven.

7. Rest 10 minutes before slicing.

Don’t Add Fat To Dishes
Add as little outside fat when cooking fat, to avoid adding calories and fat to pork dishes. Non-stick skillets help, as do cooking sprays.

Pork Juices
Pan drippings from pork roasts are great as starters for sauces and soups. Cool pork fat in the refrigerator, where the fat will rise to the top and can be removed and discarded.
