1. Preheat oven to 350 F.
2. Press Italian seasoning into surface of pork roast.
3. Place roast in roasting pan.
4. Bake 30 minutes.
5. Add potato wedges and Italian dressing to bowl. Toss to coat.
6. Add potatoes to roasting pan.
7. Return to oven for 30 minutes.
8. Remove and allow roast to rest 10 minutes before slicing.
