1. Mix together the lime juice, soy sauce, sugar, ginger, garlic, and salt in a medium bowl until the sugar dissolves.
2. Place the pork loin in a roasting pan, and scatter the bay leaves and onion rings over it.
3. Pour the lime-ginger mixture over the meat, and cover with saran wrap.
4. Refrigerate for 10 hours or so, tossing every once in a while.
5. Preheat the oven to 325 degrees.
6. Roast, uncovered, for about 3 1/2 hours; baste frequently with pan juices.
7. For a well done roast, cook until the internal temperature of the roast is 160 degrees F (70 degrees C).
